This hearty soup is not only mouth-watering but healthy. Try this soup with your favorite crispy bread.
Why not try this easy one-pot recipe for a delicious, creamy pumpkin soup.
Ingredients
1/2 kent pumpkin sliced in small cubes or thinner pieces
2 cups water
2 cups vegetable stock
3 tablespoons of cooking cream
5 cloves of garlic, crushed in mortar and pestle
Procedure
Place the pumpkin slices into a pot, add water and bring it to boil
Lower the heat and let it cook slowly
Add crushed garlic and vegetable stock
Stir well and let the pumpkin cook until it becomes soft and mushy
Take it off the stove and let it cool
Blend it using a stick blender until smooth
Stir in the cream
Add salt to taste
Enjoy!
Notes
salt and pepper is optional- add if you prefer.
Reduce salt if you have high blood pressure.
